There are SO many different recipes you can search when it comes to cookies. Usually I like to experiment and try 2 or more recipes, add a few personal touches, luckily this recipe was made perfect the first time around! This recipe I'm about to share with you was inspired out of pure cravings, and satisfied my sweet tooth.. with only 4 net carbs per cookie! Being a type 1 is not always easy, so I enjoy short, simple recipes.. That are essentially stress free and do not raise my blood sugars. So, if you were craving a diabetic friendly, low carbohydrate, simple recipe, you've come to the right place my friend!

I can't believe the way these cookies turned out! Today I used Bob's Red Mill Super Fine Almond Flour, which has never failed me for any of my baking recipes, I highly recommend it. These cookies taste like a chewy, thick, bakery style cookie, made with less sugar, healthy fats and more wholesome ingredients. Nothing taste better than homemade! Have some fun and try them out for yourself, they only take 35 minutes!
