Keto Chocolate Macaroons

These ketogenic chocolate macroons are rich in flavour and packed with nutrients! I was going through the baking section at the grocery store and noticed Bob's Red Mill "unsweetened shredded coconut". I read the label and noticed that these shredded coconuts were extremely low in carb and high in healthy fats.. Then I noticed they included a Chocolate Macaroon recipe on the back of the bag, and I was sold! Although I have only ever tried a couple of my friends recipes, I was daring and incorporated my low carb ingredients.. and you guessed it.. THEY WERE THE BEST KETO MACAROONS EVER! If you don't believe me, you will have to try it for yourself.

D E S C R I P T I O N Gluten free, rich, chocolate and coconut that melts in your mouth.. This snack is good whenever, where ever! Made without refined sugars this macaroon is diabetic friendly, ketogenic and extremely tasty!
I N G R E D I E N T S 2 egg whites
1/4 tsp salt
1/2 cup Swerve granulated sweetener 2 tbsp melted grass fed butter (vegan options such as Melt) 1/4 tsp organic pure vanilla extract 1 cup Bob's Red Mill shredded coconut
3/4 cup semi sweet "Lily's Chocolate Chips" melted + cooled

I N S T R U C T I O N S Pre-heat oven to 325 F. Beat egg whites and salt until stiff. Add swerve (or sugar substitute of your choice), slowly beating until egg whites stand in peaks. Add vanilla extract. Add coconut. Add melted butter and chocolate and stir until well mixed. Drop by teaspoonfuls on a parchment-lined baking sheet and bake for roughly 15 minutes. Cool slightly and remove from paper with spatula. Makes roughly 24 macarons. Enjoy my friends, xo
