Keto Double Chocolate Brownie Cookies

If you have already tried making my Simple Almond + Coconut flour chocolate chip cookies, then you will love these ones, just as much.. or more! I was randomly craving chocolate when I cooked up this recipe, and ma said I had to share it because they were "so good". My boyfriend describe these as "fluffy brownie cookies".. whatever they are, they're delicious! As most of you know I am a type one diabetic and love creating food that doesn't spike blood sugar levels, so this recipe is diabetic approved! So, if you were craving a diabetic friendly, low carbohydrate, simple recipe, you've come to the right place my friend!

I can't believe the way these cookies turned out! Today I used Bob's Red Mill Super Fine Almond Flour, which has never failed me for any of my baking recipes, I highly recommend it. These cookies taste like a chewy, thick, bakery style cookie, made with less sugar, healthy fats and more wholesome ingredients. Nothing taste better than homemade! Have some fun and try them out for yourself, they only take 35 minutes!

D E S C P R I T I O N Gluten free, fluffy, double chocolate chip cookies baked without any grains, or refined sugars. They are diabetic friendly, paleo, and extremely delicious!

I N G R E D I E N T S 3/4 cup Super Fine Almond Flour (or almond meal) 1/4 cup Coconut Flour 1 tsp baking soda 1-2 tbsp cocoa powder

1/2 tsp Himalayan salt 1 dash Cinnamon (ceylon cinnamon preferred for diabetics) 1/2 cup melted grass fed butter 1/2 cup Erythritol 1 tsp Stevia extract (powder) 2 eggs 1 tsp pure vanilla extract

1 cup Stevia Chocolate Chips

1/2 cup chopped nuts (optional)

I N S T R U C T I O N S 1. Preheat oven to 350 degrees. 2. In a bowl mix all dry ingredients. Add melted butter. Add eggs + vanilla, mix together. Add chocolate chips and nuts and mix together. 3. Scoop dough, one tablespoon at a time, onto the baking sheet, leaving a few inches around each cookie. 4. Bake for roughly 12 minutes, or until golden brown. Let them cool on baking sheet or a couple minutes. Enjoy my friends, xo
